Gourmet Innovations: Minted Pea Soup

This vibrant Mediterranean spin on a classic pea soup will have you craving spring and summer while comforting you in the winter. Peas and Mint are two delicate flavors that pair perfectly together, and when used in combination with simple ingredients, their bright, bold, and fresh flavors can stand out.
Thickening the soup with CLARIA® Plus Cornstarch provides a creamy texture in place of cream or another dairy. The combination of peas and PROMITOR® 85 Soluble Fiber makes this a fiber-enriched soup that is both nutritious and delicious. And by omitting the feta and Greek yogurt garnish, it becomes a vegetarian/vegan, dairy-free soup option.

Ingredients
1 tbsp (12g) olive oil
1 cup (52g) yellow onion, chopped
3 cloves garlic, chopped
4 cups (605g) green peas, fresh or frozen
4 cups (946g) water
3 tbsps (45g) lime juice
½ cup (16g) fresh mint, chopped
1 tsp (2g) black pepper
⅛ tsp (0.25g) nutmeg
1 tbsp (10g) CLARIA® Everlast 565 Starch
¼ cup (25g) PROMITOR® 85 Fiber
Optional Garnish
Feta cheese crumbles
Chopped mint
Peas
¼ cup (61g) Greek yogurt, thinned with 1 tbsp (15g) water
Instructions
- Heat the oil in a medium saucepan over low heat and cook the onion and garlic slowly for 10–15 minutes. Make sure not to brown the onion.
- Add water and bring to a simmer. Once simmering, add peas. Simmer for one minute to plump/defrost peas. Transfer to blender.
- Blend on high speed for about 3 minutes until liquid is completely pureed.
- Return to pot. Mix cornstarch with 1 tsp of water to make a slurry. Pour slurry into soup and mix.
- Add lime juice, black pepper, salt, nutmeg, and fiber. Bring pot to a simmer, stirring constantly.
- Once thickened, add mint and return soup to blender. Blend again.
- Pour into bowls, garnish, and serve hot.
NOTES
- This recipe requires a blender (or food processor or immersion stick), and a large soup pot (8 quarts at least)
- For reheating, place in pot on low heat for low and slow cooking to avoid changing the soup color.
