Gourmet Innovations: Raspberry Rose Ice Cream

At Tate & Lyle, we think it’s ok to play with your food. We’re always trying new ways to use our ingredients in real-world situations and push the boundaries of better-for-you food and beverage formulation. I was inspired by the vibrant new colors in our brand and sought out to recreate them through food. We hope this recipe inspires you to discover what’s possible when you have the right ingredients and the right team working with you.

It's brightly colored, decadently creamy, fabulously flavorful and, most importantly — and perhaps surprisingly — it's better for you! While this delectable ice cream is no-sugar-added, it delivers a clean, balanced sweetness profile thanks to a combination of stevia, allulose, and erythritol. Additionally, the allulose and erythritol help control the freezing-point depression, contributing to the smooth and creamy texture and mouthfeel. Not only has this ice cream been fortified to be a good source of fiber, but the fiber is also a key ingredient for adding bulking solids to the formula. It’s ice cream that fully delivers on the promise of an indulgent, premium eating experience without added sugars.

All that, and it’s trendy, too! “Viva Magenta” is Pantone's 2023 Color of the Year, and while this ice cream is not representative of that exact shade, they’re both part of the pink family, and we can expect to see shades and hues of pink everywhere from the food industry to the fashion industry. In terms of taste, floral flavors are an ongoing trend that remains in full bloom. We used rose water to bring forward a unique and vibrant flavor that pairs well with fresh raspberries and brings complexity to the palette.
